Sensorial analysis

Our Pinella Frizzante Veneto IGT presents in the glass with a dense and fine perlage, giving way to a slight haze from the suspended yeasts. On the nose, it expresses itself with delightful notes of ripe and tropical fruit, aromatic herbs and the typical fermentation scents. On the palate, it is vibrant, thanks to excellent freshness and savoriness. The finish is dry, clean and pleasantly savory.

History of Pinella

The origin of the Pinella grape is very ancient and can be traced along the eastern shore of the Adriatic Sea. From the Middle Ages, it spread to the nearby regions, acquiring various names, including "Pinola," as it was called in the Euganean Hills. Periods of both neglect and appreciation followed for this white grape variety, which was reintroduced in the Euganean Hills in the early 2000s.

Pinella manages to maintain balance even in the driest years thanks to its pronounced acidity, late ripening and consistently low alcohol content. Therefore, in the context of sustainable production, we chose to cultivate it in areas that are challenging for other varieties, observing the results. While grapes from the highest altitudes are suitable for a second bottle fermentation, in warmer areas and hot years, we prefer to produce still white wines.

Pairings

Our Pinella Frizzante is perfect for an aperitif thanks to its light and lively structure. Excellent with dishes characterized by sweetish tendency and fattiness: fresh cheese, fried fish, vegetarian dishes, seafood and land-based first courses. Serve at 8°C.
