Le Cerese – Vino Rosso
In the Faedo High Valley, marl matches with rhyolitic rock forming a lean, draining and deep soil, suitable for moderate and constant cultivations. Vineyards, orchards and olive groves alternate in this versatile land. Here Merlot wine develops a solid and dry body, with clear tannins and distinct fruit notes.
On a plot of land of less than one hectare, located in the Faedo Valley, we cultivate pure Merlot with spurred cordon.
Fermentation in stainless steel tanks with indigenous yeasts. It macerates on the skins for about one week, then it ferments in tonneaux for 6 months and rests in cement tanks for about 12 months.
Service and pairing
To be served at about 18° C. It improves during early years, perfect for aging 3-8 years. Thanks to its marked fresh and fruity notes, it easily accompanies meat first courses, medium mature cheese and salami.
