Costa di Bisaccia – Bianco IGP Terre Siciliane

We grow our grapes on calcareous soils in the Sicilian hinterland, plots of rare beauty mitigated in summer by the Mistral wind. The warmth of the sun, the saltiness of the sea and the excellent exposure are reflected in this wine with its fragrant floral and fruity notes, which intersect with a distinct savouriness and a dry sip with a slightly tannic finish.

Pairings with our Costa di Bisaccia Bianco
Our Costa di Bisaccia Bianco is a savoury and dry white wine, the result of a new interpretation of certain grapes in these lands. Ideal in combination with a good pecorino cheese, “Catanese onion” or fish first courses. Serve at 12-14°C.

History
The history of Grillo in Sicily is inextricably intertwined with the economic fortunes of Marsala production. It suffered the same decline after World War II, but was revived in the 1990s. It is a ductile grape, giving rise to different scents depending on the climate, the soil, and the management in the vineyard. It was precisely this that inspired us to try sulphite-free maceration and processing.
