Costa di Bisaccia – Bianco IGP Terre Siciliane
A new experiment coming from our Sicilian lands: a Grillo variety macerated on the skins with no added sulphites.
The 10 days maceration gives this wine depth and purity. The fragrant floral and fruity notes mix with the pronounced savory, ending with a soft tannin.
The label represents the rendezvous between the philosophy of our Euganean production and the Sicilian tradition.
In the little portion of land named Costa di Bisaccia, upon a hill of dolomitic origin with a good amount of sand caused by the weathering of calcareous tufa, Grillo found its perfect habitat in a vineyard facing to North-East, about 380 mt high, in 1,68 Guyot training hectares (6.000 plants/ha).
Spontaneous fermentation with a 10 days cold maceration. Aged in stainless steel tanks and bottled the following spring. Not clarified nor filtered. With no added sulphites.
Service and pairing
To be served at 12-14°C. Thanks to its savouriness and its persistent floral and mineral aromas, it is ideal with important fish and cheese dishes.
